A delicious, no-bake treat that combines the crunch of Rice Krispies with the creamy goodness of ice cream. This easy-to-make dessert is perfect for summer, parties, or any occasion that calls for something sweet and refreshing.
Ingredients
4 cups Rice Krispies cereal
2 cups mini marshmallows
1/4 cup unsalted butter
1/2 teaspoon vanilla extract (optional)
2 cups vanilla ice cream (or any flavor of your choice)
Toppings (chocolate chips, sprinkles, crushed candies, etc.)
Instructions
Prepare the Rice Krispies Mixture: In a large saucepan, melt butter over medium heat. Once melted, add mini marshmallows and stir until completely melted and smooth.
Mix with Rice Krispies: Remove from heat and stir in the Rice Krispies cereal, making sure each piece is coated evenly with the marshmallow mixture.
Form the Base: Spread the Rice Krispies mixture evenly in a baking dish lined with parchment paper. Let it cool slightly (but not completely) to avoid the ice cream melting when mixed.
Add Ice Cream: Gently fold softened ice cream into the Rice Krispies mixture. Stir until it’s well combined.
Freeze: Spread the mixture into a smooth, even layer and freeze for 3-4 hours or until firm
Serve and Enjoy: After freezing, cut into squares or scoop out servings, and top with any additional toppings like chocolate chips or sprinkles.
Notes
You can substitute the vanilla ice cream for any flavor you prefer.
