Ingredients
1 cup chopped pistachios
½ cup bread crumbs
2 tablespoons Dijon mustard
2 tablespoons olive oil
2 tablespoons honey
Salt and ground black pepper to taste
2 large skinless, boneless chicken breasts, cut into 1-inch strips
Instructions
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the crust: In a medium-sized bowl, combine the chopped pistachios, bread crumbs, Dijon mustard, olive oil, honey, salt, and black pepper. Stir well to ensure everything is evenly mixed.
Coat the chicken: Place the chicken strips onto the prepared baking sheet. Brush each piece with Dijon mustard. Press the pistachio mixture firmly onto each chicken strip, making sure the coating sticks well.
Bake the chicken: Bake the chicken in the preheated oven for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). For an extra crispy finish, broil the chicken for the last 1-2 minutes, but watch closely to avoid burning.
Serve: Remove the chicken from the oven and allow it to rest for a few minutes before serving. Pair with roasted vegetables or a fresh salad for a complete meal.
