Ingredients

1 cup all-purpose flour

 

1 tablespoon sugar

 

1/2 teaspoon baking powder

 

1/4 teaspoon salt

 

1 cup milk

 

1 large egg

 

1 tablespoon melted butter

4 large eggs (for filling)

 

1/2 cup shredded cheddar cheese

 

1 tablespoon butter (for cooking)

 

Salt and pepper to taste

 

Optional: chopped chives or parsley for garnish


Instructions

 

 1. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.

 

2.In a separate bowl, combine milk, 1 egg, and melted butter. Gradually add the wet ingredients to the dry ingredients and whisk until smooth.

 

3.Heat a non-stick skillet over medium heat and lightly grease it with butter.

 

4.Pour 1/4 cup of the batter into the skillet. Tilt to spread it evenly. Cook for 1-2 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden. Repeat until you have 4 pancakes.

 

Scrambled Eggs for the Filling:

 

1.Beat the remaining 4 eggs with salt and pepper.

 

2.In a separate skillet, heat butter over medium heat and scramble the eggs until just set.

 

Assembling the Wrap:

 

1.Place a pancake on a plate, add a portion of scrambled eggs, sprinkle with cheddar cheese, and roll it up like a burrito.
