Description

This Blueberry and Strawberry Icebox Cake Recipe is a refreshing, no-bake dessert that brings together layers of fresh fruit, creamy pudding, and crunchy graham crackers. Perfect for summer, it’s easy to prepare and will surely become your go-to dessert for any occasion.


Ingredients

  • 2 pounds fresh strawberries (washed and sliced)

  • 1 1/2 cups fresh blueberries (washed)

  • 3.4 ounces Jell-O Instant Vanilla Pudding

  • 2 cups cold milk

  • 16 ounces whipped topping

  • 8 ounces cream cheese (softened)

  • 14.4-ounce box of graham crackers


Instructions

  • Prepare the Berries:
    Wash and slice the strawberries, and rinse the blueberries. Set them aside to drain any excess water.

  • Make the Pudding Layer:
    In a mixing bowl, whisk the Jell-O Instant Vanilla Pudding mix with the cold milk for 2 minutes. Add the softened cream cheese to the mixture and whisk until smooth and creamy.

  • Assemble the Cake:
    In a 9×13-inch baking dish, lay down a layer of graham crackers to cover the bottom. Spread a layer of the creamy pudding mixture over the crackers, and then add a layer of sliced strawberries and blueberries. Repeat the layers, finishing with a final layer of pudding.

  • Chill the Cake:
    Cover the baking dish with plastic wrap or foil and refrigerate for at least 4 hours, preferably overnight. This allows the layers to set and the graham crackers to soften.

  • Serve:
