Ingredients
2 pounds fresh strawberries (washed and sliced)
1 1/2 cups fresh blueberries (washed)
3.4 ounces Jell-O Instant Vanilla Pudding
2 cups cold milk
16 ounces whipped topping
8 ounces cream cheese (softened)
14.4-ounce box of graham crackers
Instructions
Prepare the Berries:
Wash and slice the strawberries, and rinse the blueberries. Set them aside to drain any excess water.Make the Pudding Layer:
In a mixing bowl, whisk the Jell-O Instant Vanilla Pudding mix with the cold milk for 2 minutes. Add the softened cream cheese to the mixture and whisk until smooth and creamy.Assemble the Cake:
In a 9×13-inch baking dish, lay down a layer of graham crackers to cover the bottom. Spread a layer of the creamy pudding mixture over the crackers, and then add a layer of sliced strawberries and blueberries. Repeat the layers, finishing with a final layer of pudding.Chill the Cake:
Cover the baking dish with plastic wrap or foil and refrigerate for at least 4 hours, preferably overnight. This allows the layers to set and the graham crackers to soften.Serve:
Once chilled, slice and serve the Blueberry and Strawberry Icebox Cake. Garnish with extra fresh berries, if desired.
Notes
For the best results, use fresh, in-season berries for a vibrant flavor.
You can customize the fruit or use different types of cookies instead of graham crackers for a unique twist.
If you don’t have cream cheese, you can skip it, but it adds a nice tangy depth to the pudding.
